Everything turns to POOP at 40!
Yes, I did make this cake and boy did the kids (and grown ups) love it! I must say it was pretty funny. The cake was chocolate and allergy friendly as it did not contain any dairy, eggs, or nuts. I do use coconut milk and a coconut spread in the frosting which does give it a nice light coconut’y flavor. So as long as you can have coconuts you can enjoy this!
Here is my recipe:
1/2 cup of shortening
1/2 cup of coconut spread ( I use Earth Balance Organic Coconut Spread)
2-3 Tbsp Coconut milk or Coconut creamer
1 tsp vanilla
approx 4 cups of powdered sugar
Beat the shortening and the coconut spread together mixing, then add your vanilla and half of the coconut milk/creamer. Add half of the powdered sugar and mix. Continually adding more powder sugar alternating with the coconut milk/creamer until you reach your desired consistency. You may use more or less of the milk/creamer and/or the powdered sugar.
I do find that due to the coconut milk this frosting does like to be kept cold and you should not make it too loose otherwise it will “droop” off of your cake. Been there done that!
Enjoy Everyone

Mounds bar and black forest pops
We were busy yesterday in the Tasty Kitchens creating some new delicious flavors for your enjoyment.
We did three new flavors:
Mounds Bar: Coconut cake mixed with a light coconut frosting dipped in dark (or milk if you prefer) chocolate with coconut sprinkled on top
Lemon Raspberry: Moist lemon cake mixed with a vanilla frosting with a dab of raspberry jam in the center that has been dipped in a white raspberry fudge chocolate. OH MY this smells so good!
Black Forest: Our favorite chocolate cake with a hint of cherry mixed with chocolate frosting, a cherry in the center and dipped in milk or dark chocolate.

Spring Sprinkles
Sprinkles are like edible glitter to me, they make everything so cute and sparkly. So naturally when I walk past them at any store I can’t help but stop, stare and usually add several to my cart. Don’t they just make you smile? While at Home Goods the other day I picked up a few bottles of them in wonderful pastel or what I like to say Spring-y colors! Sugar on Top is the brand and I just adore the lovely glass bottles that they put them in. I’m also a published paper crafter so when the jars are empty guess what I use them for? YES, GLITTER!!! and/or sequins which is another obsession of mine. In fact if you like paper crafts check out my group on Facebook called Papercrafters Cafe, it is for crafting whether it be cakes, knitting, paper crafting (primarily) or beading we would love to have you there.
Here is a peak of some wonderful new sprinkles I acquired the other day. In fact I may have to go back for more !!!
Give us a shout to order your Easter basket goodies before it is too late. Bunnys and Chicks will make big and little kids smile this holiday.
